BATTER

1 c
steele cut oats
2 scoop(s)
vanilla whey-to-go protein powder
1/2 c
light agave nectar
2 Tbsp
cinnamon
1/4 c
egg whites
2
eggs

CANDIED APPLES

1 Tbsp
earth balance (butter)
1
granny smith apples
2 Tbsp
palm sugar

How to Make Apple Oatmeal Protein Muffins

Step-by-Step

  • 1Preheat oven to 325 degrees. Prep and cook 1 cup of steel cut oats using directions on label.

    Chop 1 to 2 Apples of your choice into small slices, add Earth Balance (or butter), and Palm Sugar (or sugar of your choice) and Cinnamon, then cook on medium heat until semi soft.
  • 2Mix all ingredients for the batter directly into the cooked steele cut oats.
  • 3Fill the muffin pan with batter.
    Side note: Don't make the same mistake I did; use cup cake liners. ;)
  • 4Bake for about 40 minutes and serve, let cool for about 10, and serve.
