Ingredients

  • BATTER
  • 1 cup steele cut oats
  • 2 scoops vanilla whey-to-go protein powder
  • 1/2 cup light agave nectar
  • 2 tablespoons cinnamon
  • 1/4 cup egg whites
  • 2 - eggs
  • CANDIED APPLES
  • 1 tablespoon earth balance (butter)
  • 1 - granny smith apples
  • 2 tablespoons palm sugar

How To Make apple oatmeal protein muffins

  • Step 1
    Preheat oven to 325 degrees. Prep and cook 1 cup of steel cut oats using directions on label. Chop 1 to 2 Apples of your choice into small slices, add Earth Balance (or butter), and Palm Sugar (or sugar of your choice) and Cinnamon, then cook on medium heat until semi soft.
  • Step 2
    Mix all ingredients for the batter directly into the cooked steele cut oats.
  • Step 3
    Fill the muffin pan with batter. Side note: Don't make the same mistake I did; use cup cake liners. ;)
  • Step 4
    Bake for about 40 minutes and serve, let cool for about 10, and serve.
