Xanthan Gum is a low carb thickening ingredient I buy from Amazon, commonly used in low carb diets replacing flour or cornstarch. It doesn't take much to thicken. Ingredients
- BISCUITS
- 1/4 cup salted butter, melted
- 3 large eggs
- 1/3 cup coconut flour
- 1/4 teaspoon baking powder
- 1 1/4 cups shredded chedder-jack cheese
- SAUSAGE GRAVY
- 1/2 pound breakfast sausage
- 1/2 cup chicken broth
- 1/3 cup heavy cream
- 2 tablespoons cream cheese
- 1/2 teaspoon xanthan gum
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
How To Make keto southern biscuits & gravy-the low carb way

Step 1Preheat oven to 400. I use a silpat mat, or you can use parchment to line your baking pan or cooie sheet. Set aside.

Step 2To make biscuits, combine all ingredients in a large bowl and stir by hand. Scoop 9 equal portions of dough onto prepared pan. I use a small cookie dough scoop.

Step 3Bake 15-17 minutes while making sausage gravy.

Step 4To make the sausage gravy, Cook sausage over med high heat in a skillet, breaking up pieces with a wooden spoon. Don't drain. Add the chicken broth, cream, cream cheese and xanthan gum. Stir and cook on medium until thickened. Add salt and pepper. Serve over warm split biscuits.
