This is best if left to soak overnight, but it can be ready in 30 minutes if you like chewy oats.
Be sure to use old-fashioned rolled oats, because quick oats tend to be mushy.

Ingredients

2 c
old fashioned rolled oats
1/2 c
sliced almonds or walnuts
1/4 c
sunflower seeds
1/2 c
raisins
1/2 c
chopped dried apricots or cranberries
1 1/4 c
lowfat milk
2 Tbsp
honey or brown sugar
1 tsp
vanilla (optional)
1 pinch
salt (optional)
yogurt for topping if desired

Step-by-Step

  • 1Combine all ingredients except yogurt in a bowl with airtight lid, making sure all oats are in contact with milk. A little more milk can be used if necessary.
  • 2Let sit refrigerated at least 1 hour, or refrigerate overnight. Serve topped with your choice of yogurt if desired.
