healthy flaxseed and blueberry pancakes

I love adding flaxseed to pancakes, cupcakes and other desserts, it adds a healthy, slightly nutty taste. You can use different fruit, like blackberries. They'll be just as good!

Ingredients

  • 1-1/2 cup pancake mix, i used bisquick heart healthy mix.
  • 1/2 cup flaxseed meal
  • 2 large eggs
  • 1 cup fat-free milk
  • 1 cup wyman's frozen wild blueberries, or fresh berries

How To Make healthy flaxseed and blueberry pancakes

  • Step 1
    Spray a lg skillet w/ cooking spray and place over medium heat. In bowl, stir together pancake mix, and flaxseed meal.
  • Step 2
    In another bowl, whisk together milk and eggs. Pour milk mix into pancake mix, stir until moistened.
  • Step 3
    Spoon 1/4 cup batter into skillet, sprinkle w/ berries. Cook until bubbles form. Flip over and cook until light brown. Repeat w/ remaining batter and serve w/ warmed maple syrup.
