I love adding flaxseed to pancakes, cupcakes and other desserts, it adds a healthy, slightly nutty taste. You can use different fruit, like blackberries. They'll be just as good!

Ingredients

1-1/2 c
pancake mix, i used bisquick heart healthy mix.
1/2 c
flaxseed meal
2 large
eggs
1 c
fat-free milk
1 c
wyman's frozen wild blueberries, or fresh berries

How to Make Healthy flaxseed and blueberry pancakes

Step-by-Step

  • 1Spray a lg skillet w/ cooking spray and place over medium heat. In bowl, stir together pancake mix, and flaxseed meal.
  • 2In another bowl, whisk together milk and eggs. Pour milk mix into pancake mix, stir until moistened.
  • 3Spoon 1/4 cup batter into skillet, sprinkle w/ berries. Cook until bubbles form. Flip over and cook until light brown. Repeat w/ remaining batter and serve w/ warmed maple syrup.
