I love adding flaxseed to pancakes, cupcakes and other desserts, it adds a healthy, slightly nutty taste. You can use different fruit, like blackberries. They'll be just as good!

Ingredients

  • 1-1/2 c
    pancake mix, i used bisquick heart healthy mix.
  • 1/2 c
    flaxseed meal
  • 2 large
    eggs
  • 1 c
    fat-free milk
  • 1 c
    wyman's frozen wild blueberries, or fresh berries

How to Make Healthy flaxseed and blueberry pancakes

Step-by-Step

  1. Spray a lg skillet w/ cooking spray and place over medium heat. In bowl, stir together pancake mix, and flaxseed meal.
  2. In another bowl, whisk together milk and eggs. Pour milk mix into pancake mix, stir until moistened.
  3. Spoon 1/4 cup batter into skillet, sprinkle w/ berries. Cook until bubbles form. Flip over and cook until light brown. Repeat w/ remaining batter and serve w/ warmed maple syrup.
