healthy, baked blueberry french toast
I love blueberries, especially the wild blueberries and wanted to make a baked french toast, so I adapted a recipe I had for regular french toast and it came out beautifully.

Ingredients
- 1 - loaf thick whole wheat bread
- 1-1/2 cup frozen or fresh blueberries, i used wild blueberries
- 1/2 cup toasted, sliced almonds
- 1/2 cup low-fat cottage cheese
- 2 cups egg substitute
- 2 tablespoons sugar
- 2-1/2 cup fat-free milk
- 1-1/4 teaspoon vanilla
How To Make healthy, baked blueberry french toast

Step 1Lightly spray a 9" x 13" baking pan w/ cooking spray. Heat oven to 375. Tear bread into 1" cubes. In bowl, mix bread, blueberries and almonds. Spread evenly into pan.

Step 2In lg bowl, beat cream cheese until smooth. Blend in egg substitute and milk. Mix in sugar and vanilla. Pour over bread mix. Cover and let stand 1 hr.

Step 3Cover w/ foil and bake 20 mins. Remove foil and bake another 20 mins or until golden. Sreve w/ butter and syrup if desired.
