I love blueberries, especially the wild blueberries and wanted to make a baked french toast, so I adapted a recipe I had for regular french toast and it came out beautifully.

Ingredients

1
loaf thick whole wheat bread
1-1/2 c
frozen or fresh blueberries, i used wild blueberries
1/2 c
toasted, sliced almonds
1/2 c
low-fat cottage cheese
2 c
egg substitute
2 Tbsp
sugar
2-1/2 c
fat-free milk
1-1/4 tsp
vanilla

How to Make Healthy, baked blueberry french toast

Step-by-Step

  • 1Lightly spray a 9" x 13" baking pan w/ cooking spray. Heat oven to 375. Tear bread into 1" cubes. In bowl, mix bread, blueberries and almonds. Spread evenly into pan.
  • 2In lg bowl, beat cream cheese until smooth. Blend in egg substitute and milk. Mix in sugar and vanilla. Pour over bread mix. Cover and let stand 1 hr.
  • 3Cover w/ foil and bake 20 mins. Remove foil and bake another 20 mins or until golden. Sreve w/ butter and syrup if desired.
