I love cream cheese and I love pancakes, so I put the 2 together to see how it would taste---yummy!!

Ingredients

  • 1 - 3 oz pkg reduced-fat cream cheese, softened
  • 2 - eggs, slightly beaten
  • 2 cups self-rising flour
  • 2 tablespoons sugar
  • 1-1/2 cup fat-free milk
  • 2 tablespoons melted butter
  • 1-1/2 teaspoon vanilla
  • 1-1/2 cup blueberries

How To Make creamy blueberry pancakes

  • Step 1
    In bowl, beat cream cheese until smooth. Add eggs, beat well. In another bowl, stir together flour, and sugar. Make a well in center.
  • Step 2
    Beat milk, butter and vanilla into cream cheese mix. Pour into well of cream cheese mix. Stir until just moistened. Stir in blueberries.
  • Step 3
    Spray a lg skillet w/ cooking spray, place over medium heat. Pour 1/4 cup batter into skillet. Cook until bubbly, flip over and continue to cook until lightly browned. Repeat w/ batter. Serve w/ warmed maple syrup or jam.
