My children love these and ask for them often!! You can use orange zest instead if you prefer orange zest.

Ingredients

  • 2 cups biscuit/pancake mix
  • 2 - egg
  • 1 1/2 cups milk
  • 1/2 cup fresh or frozen blueberries
  • 1 teaspoon lemon zest, grated
  • 1/4 cup pecans, in pieces

How To Make blueberry lemon pancakes

  • Step 1
    Make pancakes according to directions with biscuit/pancake mix, eggs and milk, making sure not to overbeat once all ingredients incorporated.
  • Step 2
    Fold in blueberries, lemon zest and pecans carefully, to make sure not bursting berries.
  • Step 3
    Place on griddle/pan until bubbles on exterior start to disappear and flip. Serve promptly with butter and syrup.
