Found this on facebook and it looks so good. Don't know why it couldn't be a dessert too. Or for brunch, lunch or dinner. You could even use other fruits. https://www.facebook.com/TheWebChefForum?sk=timeline

Ingredients

  • PANCAKE PORTION:
  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 - egg
  • 3 tablespoons butter, melted
  • APPLE PORTION:
  • 1 - Small-Medium Red Delicious or her apple sliced thin (I used a Mandolin)
  • 1 1/2 cups brown sugar
  • 1 tablespoon granulated sugar
  • 2 tablespoons butter
  • 1 teaspoon lemon juice

How To Make apple pancake

  • Step 1
    Serves 4-6
  • Step 2
Preheat Oven to 350 (Prefer Convection oven) - Mix Pancake Batter together.
  • Step 3
Prepare Apples slices. Use a Cast Iron Skillet or other oven safe skillet. Spray skillet to ensure it doesn't stick. Put down layer of Brown Sugar and Granulate Sugar. Place slices of butter on top of sugar and then layer apples on top. Cook until bubbly and brown, move apples around to speed up cooking time (about 4-7 minutes).
  • Step 4
Once everything is bubbly, pour your pancake batter over your apple mixture, be sure to spread it around as much as possible.
  • Step 5
Place in Oven above the middle level and bake until firm/set about 15/20 minutes.
  • Step 6
Remove and let sit for about 3-5 minutes and then flip onto serving plate.
