yummy egg cups
While preparing for bariatric surgery, I came across the concept of egg cups. I tried lots of different recipes. Ended up combining what I liked from several of them, added some twists of my own, and came up with these. My whole family loves them! Very flavorful, can be low in calories and is low in carbs! All three very important for bariatric eating!

Ingredients
- 4 large eggs
- 6 slices deli ham, chopped
- 1/2 cup cheddar cheese, shredded, can be low fat or fat free
- 1 - green onions, chopped
- salt and pepper to taste
- 1/2 cup frozen spinach, defrost and squeezed dry
- 2 dashes hot sauce
How To Make yummy egg cups

Step 1Beat eggs. Stir in remaining ingredients.

Step 2Spray silicone egg mold with non stick spray.

Step 3Add egg mixture to each mold until almost to the top.

Step 4Cook in air fryer at 360 for 12 minutes. Remove from mold and enjoy!
