This is a nice healthy breakfast and it tastes delicious. To make it even healthier, use whole grain/wheat bread.

Ingredients For veggie egg & cheese breakfast sandwich

  • 2 slice
    bread of choice
  • 1
    egg, scrambled (i use butter flavored cooking spray to avoid the fat)
  • 1 slice
    cheese of choice
  • 1/2 c
    veggies of choice ~ i used spinach, mushrooms, (sauteed without fat) and diced tomato
  • butter flavor cooking spray or butter (avoid pam brand because it's gross!)

How To Make veggie egg & cheese breakfast sandwich

  • 1
    Spray pan with butter flavored cooking spray and outside of bread.
  • 2
    Lay bread in pan and layer with egg and cheese and top with second piece of bread, sprayed side out. Toast on each side until browned.
  • 3
    Remove from pan, add sauteed mushrooms, spinach and diced tomatoes to sandwich and serve.
