Veggie Egg & Cheese Breakfast Sandwich

This is a nice healthy breakfast and it tastes delicious. To make it even healthier, use whole grain/wheat bread.

Stove Top


  • 2 slice
    bread of choice
  • 1
    egg, scrambled (i use butter flavored cooking spray to avoid the fat)
  • 1 slice
    cheese of choice
  • 1/2 c
    veggies of choice ~ i used spinach, mushrooms, (sauteed without fat) and diced tomato
  • ·
    butter flavor cooking spray or butter (avoid pam brand because it's gross!)

How to Make Veggie Egg & Cheese Breakfast Sandwich


  1. Spray pan with butter flavored cooking spray and outside of bread.
  2. Lay bread in pan and layer with egg and cheese and top with second piece of bread, sprayed side out. Toast on each side until browned.
  3. Remove from pan, add sauteed mushrooms, spinach and diced tomatoes to sandwich and serve.
