These are a great fast and easy dinner at our house. Even my 2 and a half year old loves them!

Ingredients

  • 1 package morningstar farms 'sausage' crumbles
  • 1/2 large green bell pepper, diced
  • 1/2 large red or orange bell pepper, diced
  • 1/2 cup frozen corn
  • 5 - large eggs, beaten
  • 1/2 cup milk
  • 4 ounces shredded cheddar cheese
  • 8 - flour tortillas

How To Make vegetarian breakfast burritos

  • Step 1
    Fry 'sausage' crumbles until browned, about 10 minutes on medium heat. Add peppers and corn, cook approx. 10 minutes more. Meanwhile, scramble eggs in a separate pan. I like to add the cheese to the eggs when I make them as well. You can use the same pan, I just prefer to use two pans. Combine the 'sausage' to the eggs, mix well. Serve in tortillas. YUM!
