Eggs are very versatile and they aren't just for breakfast. This is a simple version of a microwave omelet for 1 Person. Prepare 2 eggs and 1T of milk per person. Mix and match meats, veggies and seasonings. The options are endless. You may also increase Eggs to 3 per person if using this as your main course at dinner. I would not fix more that 12 eggs at a time particularly in high watt microwaves because you may over cook eggs. Enjoy!

Ingredients

  • 2 large eggs or egg substitute
  • 1 tablespoon fat free milk
  • 1 small can of favorite veggie i used zuchini with chopped tomatoes & onions
  • 1/4 cup grated cheese i used cheddar
  • 1/8 teaspoon to taste onion powder, garlic powder, salt, pepper, grillmates spice & parsley flakes
  • 1 tablespoon unsalted butter

How To Make vegetable omlette

  • Step 1
    Using unsalted butter rub entire inside of large microwave safe bowl break all eggs in bowl add milk and spices and scramble until well blended.
  • Step 2
    Microwave on high for one minute stir until well mixed Continue to microwave in 30 sec. to 1 min. intervals until eggs are almost set. Stirring after each minute. Add precooked vegetables and finish cooking until desired doneness.I use metal potato masher to combine Add cheese and mix well. Serve hot Enjoy!
