This is one of my favorite omelets. The kids prefer the Cheddar cheese,but sometimes my husband and I will substitute it with Feta. Either way....it's delicious.

Ingredients

1
egg
3
egg whites
1 Tbsp
shredded cheddar cheese (can use reduced fat)
1 Tbsp
grated parmesan cheese
1/4 tsp
salt
1/8 tsp
red pepper flakes
1/8 tsp
garlic powder
1/8 tsp
ground nutmeg
1/8 tsp
pepper
1/3 tsp
olive oil
1/2 c
sliced mushrooms
1/4 c
green onion, diced
2 Tbsp
red bell pepper, finely chopped
1 c
fresh spinach
1/2 c
tomato, diced

How to Make Spinach & Mushroom Omelet

Step-by-Step

  • 1Whisk both the egg and egg whites together. Add the parmesan cheese, cheddar cheese salt, red pepper flakes, garlic powder, nutmeg and pepper to the eggs and mix well.
  • 2Add the olive oil to your pan and heat over medium heat. Combine mushrooms, green onion and bell peppers and cook until tender.
  • 3Add the spinach to the pan and cook until it's wilted.
  • 4Next, add the tomatoes and egg mixture, cook completely and enjoy!
