Spinach & Mushroom Omelet

This is one of my favorite omelets. The kids prefer the Cheddar cheese,but sometimes my husband and I will substitute it with Feta. Either way....it's delicious.

  •   3
    egg whites
  •   1 Tbsp
    shredded cheddar cheese (can use reduced fat)
  •   1 Tbsp
    grated parmesan cheese
  •   1/4 tsp
  •   1/8 tsp
    red pepper flakes
  •   1/8 tsp
    garlic powder
  •   1/8 tsp
    ground nutmeg
  •   1/8 tsp
  •   1/3 tsp
    olive oil
  •   1/2 c
    sliced mushrooms
  •   1/4 c
    green onion, diced
  •   2 Tbsp
    red bell pepper, finely chopped
  •   1 c
    fresh spinach
  •   1/2 c
    tomato, diced

How To Make

    Whisk both the egg and egg whites together. Add the parmesan cheese, cheddar cheese salt, red pepper flakes, garlic powder, nutmeg and pepper to the eggs and mix well.

    Add the olive oil to your pan and heat over medium heat. Combine mushrooms, green onion and bell peppers and cook until tender.

    Add the spinach to the pan and cook until it's wilted.

    Next, add the tomatoes and egg mixture, cook completely and enjoy!
