spinach & mushroom omelet

This is one of my favorite omelets. The kids prefer the Cheddar cheese,but sometimes my husband and I will substitute it with Feta. Either way....it's delicious.

Ingredients
- 1 - egg
- 3 - egg whites
- 1 tablespoon shredded cheddar cheese (can use reduced fat)
- 1 tablespoon grated parmesan cheese
- 1/4 teaspoon salt
- 1/8 teaspoon red pepper flakes
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon pepper
- 1/3 teaspoon olive oil
- 1/2 cup sliced mushrooms
- 1/4 cup green onion, diced
- 2 tablespoons red bell pepper, finely chopped
- 1 cup fresh spinach
- 1/2 cup tomato, diced
How To Make spinach & mushroom omelet

Step 1Whisk both the egg and egg whites together. Add the parmesan cheese, cheddar cheese salt, red pepper flakes, garlic powder, nutmeg and pepper to the eggs and mix well.

Step 2Add the olive oil to your pan and heat over medium heat. Combine mushrooms, green onion and bell peppers and cook until tender.

Step 3Add the spinach to the pan and cook until it's wilted.

Step 4Next, add the tomatoes and egg mixture, cook completely and enjoy!
