Whipped this up this morning because it fits my diet, believe it or not!

Ingredients

  • 4 - eggs
  • 3/4 cup mushrooms, chopped
  • 1/4 cup chopped onions
  • 1 cup baby spinach
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1/2 cup mozzarella cheese, shredded

How To Make spinach mushroom frittata

  • Step 1
    Put butter in medium size non stick skillet on medium high heat. When butter is melted, add chopped mushrooms and onions. Saute for 5-10 minutes.
  • Step 2
    Add spinach to skillet and cover. Beat eggs with the milk. When spinach is wilted, pour in egg mixture and stir.
  • Step 3
    Let cook until almost set. Sprinkle shredded cheese on top. Put in oven under broiler for about 5 minutes, until eggs are set and cheese is slightly golden. Slice in quarters, and serve.
