One of my son's favorite's is Conecuh smoked sausage. This is a great way to use it for breakfast, brunch, or an easy dinner.

Ingredients

  • - pastry for one 9-inch pie
  • 1 - egg yolk
  • 1 teaspoon water
  • 1 cup fresh broccoli, chopped
  • 2 cups smoked sausage, finely chopped (i prefer conecuh brand)
  • 1 small green pepper, chopped
  • 1/2 cup onion, chopped
  • 2 teaspoons butter, melted
  • 2 tablespoons all-purpose flour
  • 4 - eggs
  • 2/3 cup half-and-half
  • 2 cups cheddar cheese, shredded and divided (8 ounces)
  • 2 teaspoons fresh parsley, chopped
  • 1 teaspoon garlic salt

How To Make smoked sausage quiche

  • Step 1
    Line a 9-inch pieplate with pastry; fold edges under and flute. Prick the bottom and sides of pastry with a fork. Combine egg yolk and water; stir well. Brush egg yolk mixture over pastry. Bake at 400 degrees for 10 minutes; set aside.
  • Step 2
    Cook broccoli in a small amount of boiling water until crisp-tender; set aside.
  • Step 3
    Saute sausage, green pepper, and chopped onion in melted butter in a large skillet over medium heat until the vegetables are tender; drain well. Add flour to the sausage mixture, stirring well. Remove from heat.
  • Step 4
    Combine eggs and half-and-half in a medium bowl; beat well with a wire whisk until blended.
  • Step 5
    Sprinkle 1 cup of shredded cheese over the bottom of the pastry shell; top with broccoli and kielbasa mixture. Sprinkle with the remaining 1 cup of cheese. Pour the egg mixture over the cheese; sprinkle with parsley and garlic salt.
  • Step 6
    Bake, uncovered, at 375° for 30 to 40 minutes or until set and lightly browned. Let stand for 5 minutes before serving.
