I made a few changes to an existing friend's breakfast skillet meal. Hubby says for me to make it again. Hope you enjoy it too.

Blue Ribbon Recipe

We loved this one-dish breakfast skillet. It's a hearty dish that reminds us of a breakfast bowl, but made in one pan. Cooking potatoes in potato grease adds to the flavor of the diced potatoes. Bacon and ground sausage make this very hearty. Cooking the eggs as directed gives you a nice, over-easy egg. If you like your eggs well done, cook them for a bit longer. Adding cheese on top not only adds a nice gooey texture but also brings the breakfast together. A hearty dish for any meal of the day (it would make a great dinner), but it's also great for a weekend brunch when serving a small group.

Ingredients

  • 1/2 pound bacon, cut into bite-sized pieces
  • 1 package cubed frozen potatoes (16 oz)
  • 1/2 medium yellow onion, diced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound ground sausage
  • 6 large eggs
  • 1 cup Mexican blend shredded cheese

How To Make sausage skillet supper

  • Brown the bacon.
    Step 1
    In a nonstick or cast iron skillet, brown up bacon pieces. Drain, but reserve 3 Tablespoons of bacon drippings. Set aside.
  • Brown the sausage.
    Step 2
    In a separate skillet, brown sausage.
  • Add potatoes and onion to the skillet and start to brown. Then add sausage and bacon.
    Step 3
    To the bacon drippings, add the whole bag of broken-up frozen potatoes and diced onion. Stir until potatoes are browned and onion is translucent. Salt and pepper. Add sausage to the potato-onion mixture. Add bacon. Stir until combined.
  • Make 6 wells in the mixture and place an egg in each well.
    Step 4
    Evenly spread out the mixture in the skillet. Make 6 wells in the potato mixture. Break 1 egg in each well.
  • Cover and cook until the eggs are set.
    Step 5
    Cover and cook on low until eggs are set, about 8 minutes.
  • Sprinkle with cheese.
    Step 6
    Uncover and sprinkle evenly with cheese.
  • Cover again to melt the cheese.
    Step 7
    Cover again until the cheese is melted.
