1Once muffin is toasted (I used whole grain), spread mayo on one side, and spread/mash the avocado on the other side.
2Lay lox pieces atop the avocado. Top that with the tomato slices.
3Heat a small skillet over medium heat. Spray with olive oil or cooking oil. Crack one egg into pan, and gently agitate the egg to slightly blend the yolk and whit together. Add salt and pepper to taste.
While cooking, try to keep the egg in a circular form.
4Once cooked, remove and place on mayo side of muffin, gently close the sandwich, and enjoy!
Easier to eat if you slice the sandwich in half with a serrated knife.
