A good breakfast is a great way to start your day, especially with this sandwich that is full of flavor, packed with protein, and not overly filling. Goes down great with a cup of "jo".

Ingredients
- 1 - enlish muffin, toasted
- 2 slices tomato
- 1 - egg
- 2 ounces lox
- 1/2 - avocado
- 1 tablespoon mayonnaise, light
- - salt and pepper
How To Make rise n' shine sandwich

Step 1Once muffin is toasted (I used whole grain), spread mayo on one side, and spread/mash the avocado on the other side.

Step 2Lay lox pieces atop the avocado. Top that with the tomato slices.

Step 3Heat a small skillet over medium heat. Spray with olive oil or cooking oil. Crack one egg into pan, and gently agitate the egg to slightly blend the yolk and whit together. Add salt and pepper to taste. While cooking, try to keep the egg in a circular form.

Step 4Once cooked, remove and place on mayo side of muffin, gently close the sandwich, and enjoy! Easier to eat if you slice the sandwich in half with a serrated knife.
