My mom always made this for us, but it originally came from my aunt's father (not my grandpa, but on the other side) It is a fantastic breakfast especially if you are feeding a bunch of people and need a real hearty start to your day

Ingredients

  • 2-3 - boiled or baked potatoes, cubed (i like to use leftover baked potatoes)
  • 1 - white or yellow onion, chopped
  • 1 - jalapeno pepper, chopped fine (or try canned)
  • 1 cup cooked chopped ham, or crumbled sausage or bacon
  • 1 cup shredded cheddar cheese (or pepper jack if you like it hotter)
  • 6 - large eggs
  • 1/4 cup milk

How To Make ray's breakfast

  • Step 1
    In a large pan, brown onion, potatoes and pepper in hot oil. When veggies are tender, add the meat and stir to combine.
  • Step 2
    Crack eggs into a separate bowl. add milk and scramble. Pour into the veggie pan slowly and begin stirring to mix everything together.
  • Step 3
    When the eggs are beginning to cook, add the cheese and continue stirring until the cheese is all melted and the eggs are cooked through. enjoy!
