·6 eggs (scrambled)

·6 tablespoons margarine (divided)

·4 slices of bacon (fried crispy and crumbled)

·1/2 onion (diced)

·1/4 green pepper (diced)

·5 fresh mushrooms (sliced)

·4 slices swiss cheese
How to Make Rachel's eggs
- In a large size skillet, Melt 3 Tablespoons margarine, add vegetables and saute over medium heat stiring occasionally. Meanwhile, In another skillet, melt 3 Tablespoons margarine. add scrambled eggs. cook on medium heat, scrambling constantly until eggs are firm. divide scrambled eggs between 2 plates, top with veggies. add 2 slices swiss cheese to each plate. Microwave to melt the cheese slightly. top with bacon.
