- - 6 eggs (scrambled)
- - 6 tablespoons margarine (divided)
- - 4 slices of bacon (fried crispy and crumbled)
- - 1/2 onion (diced)
- - 1/4 green pepper (diced)
- - 5 fresh mushrooms (sliced)
- - 4 slices swiss cheese
How To Make rachel's eggs

Step 1In a large size skillet, Melt 3 Tablespoons margarine, add vegetables and saute over medium heat stiring occasionally. Meanwhile, In another skillet, melt 3 Tablespoons margarine. add scrambled eggs. cook on medium heat, scrambling constantly until eggs are firm. divide scrambled eggs between 2 plates, top with veggies. add 2 slices swiss cheese to each plate. Microwave to melt the cheese slightly. top with bacon.
