You may find that your local variety of turnip greens are a bit tougher than other types of turnip greens. Just simply blanch in boiling water until tender.

Ingredients

  • 3 large
    eggs
  • 1 tsp
    cream
  • 1 tsp
    olive oil
  • 1 1/2 tsp
    butter
  • 1/2 medium
    mild red chili -- chopped
  • 2 c
    turnip greens
  • 2 Tbsp
    goat cheese -- crumbled

How to Make Omelet with Turnip Greens, Goat's Cheese & Chili

Step-by-Step

  1. Loosely beat the eggs with the cream.
  2. In a large frying pan, heat the butter and oil until foamy.
  3. Add the chili and the turnip greens until the greens begin to wilt and then immediately add the eggs.
  4. Once the eggs have slightly set on the bottom, add the goat cheese and flip the omelet over.
  5. Take off the heat and allow to stand for a minute.
