mini quiche from leftovers
I wanted a small quiche for my lunch today, and did not want to take time to make a crust. I found I could press a slice of bread into a small casserole dish to provide a crust. Then I sauteed some leftover broccoli, cauliflower, and sweet peppers in olive oil to soften them up, and added them to the quiche. Cheese, milk, eggs, and seasonings completed this. And it was very good!

Ingredients
- 1 large slice bread, any type
- 1/2 cup chopped mixed vegetables, steamed or sautéed
- 1/3 cup shredded cheese, any type
- 2 large eggs, beaten
- 1/2 cup milk or light cream
- 1-2 pinch salt, pepper & seasonings of your choice
How To Make mini quiche from leftovers

Step 1Preheat oven to 425°F. Spray a 6 or 7-inch round casserole dish with oil. Press the slice of bread into the bottom, stretching it into a round shape to fit. Place the vegetables and cheese on top of the bread.

Step 2Beat the eggs with the milk, salt, and pepper. Add a grating of nutmeg if desired, or other herbs of your choice. Pour the mixture carefully over the the vegetables and cheese.

Step 3Bake the quiche about 30 minutes, until puffy and the center tests done with a knife. Cool about 10 minutes before serving.
