Ingredients

  • 2 large ripe tomatoes, seeded and chopped
  • 1/3 cup onion, chopped finely
  • 1 clove garlic, chopped finely
  • 2 tablespoons butter
  • 8 - eggs
  • - salt and pepper
  • 1 tablespoon italian flat parsley, chopped finely

How To Make maltese breakfast scramble

  • Step 1
    Cook onions and garlic in 2 T butter until soft.
  • Step 2
    Add the tomatoes and cook for 5 minutes.
  • Step 3
    Beat the eggs and add salt and pepper.
  • Step 4
    Pour the eggs onto the onion and tomato mixture.
  • Step 5
    Add parsley immediately.
  • Step 6
    Stir continuously over low heat until the eggs are barely set.
  • Step 7
    Serve Immediately
