- 2 large ripe tomatoes, seeded and chopped
- 1/3 cup onion, chopped finely
- 1 clove garlic, chopped finely
- 2 tablespoons butter
- 8 - eggs
- - salt and pepper
- 1 tablespoon italian flat parsley, chopped finely
How To Make maltese breakfast scramble

Step 1Cook onions and garlic in 2 T butter until soft.

Step 2Add the tomatoes and cook for 5 minutes.

Step 3Beat the eggs and add salt and pepper.

Step 4Pour the eggs onto the onion and tomato mixture.

Step 5Add parsley immediately.

Step 6Stir continuously over low heat until the eggs are barely set.
