I make these low-fat roll-ups for a quick, delicious breakfast, or as a snack. Calories: 222 Fat: 10.7 grams Carbs: 18.5 grams.

Ingredients

  • 1/2 cup egg beaters egg substitute
  • 2 - mushrooms, sliced
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped green bell pepper
  • 2 tablespoons chopped red onion
  • 1/2 cup torn baby spinach leaves
  • 2 - turkey sausage patties, cooked and crumbled
  • 1/4 cup reduced-fat, shredded cheddar cheese
  • 2 - whole wheat tortillas

How To Make lo-cal sausage, egg and cheese roll-ups

  • Step 1
    Spray a lg skillet w/ cooking spray. In lg bowl, scarmble together egg beaters, veggies and sausage.
  • Step 2
    Pour mix into skillet. Cook, stirring often to scramble. Add cheese, and stir until melted. Transfer to a bowl.
  • Step 3
    Heat each tortilla in skillet on both sides until warmed. Fill tortillas evenly w/ filling. I serve w/ a splash of hot sauce.
