hollyann's stop the music deviled eggs
If you are a lover of Chow-Chow you'll want to have a whole plate of these deviled eggs. Wow, I am a big fan of Chow-Chow. I bought my first jar when I was in West Virginia visiting family. Anyway, the Chow-Chow that I have is a sweet one and made these eggs so incredibly delicious! My family all enjoy Sweet Chow-Chow so these are a hit for us! ---Another recipe from "Deviled Eggs Cookbook".

Ingredients
- 6 medium hard-cooked eggs, peeled, cut in half, and yolks mashed in a bowl
- 1/4 cup mayonnaise
- 2 - 3 tablespoons chow-chow
- 2 teaspoons prepared yellow mustard
- 1/4 teaspoon salt
- 1/8 to 1/4 teaspoon black pepper, to your taste
- GARNISH
- - paprika, hot or sweet

Step 1Combine the thoroughly mashed yolks and mayonnaise until fairly smooth. Mix in the chow-chow, mustard, salt and pepper. My Chow-Chow had alot of juice and I tried to drain the cabbage and veggies the best I could but it still made my mixture a little less thick than I like. I think next time I will put the Chow-Chow in a strainer and press it with a fork.

Step 2Fill the whites evenly with the mixture and sprinkle each egg half generously with paprika.

Step 48/5/13 ---Made these tonight for lunch tomorrow. They are just so yummy with the addition of the chow chow. I did add an addt'l tbsp. so I will adjust the recipe above to include that.
