BIg daddy and I have started a healthier eating plan. Though we will have our "Faturday" once a week, where we can splurge a little, for the rest of the week, it will be healthy eating. We both have weight to lose and health to consider. So this morning for breakfast made a healthy omelet. No cheese in this one.

    red, yellow, & orange bellpeppers
  • 3
    eggs
  • ·
    handful of fresh baby spinach
  • ·
    red onion
  • ·
    couple of shakes of tabasco sauce
  • ·
    fresh mushrooms
  • ·
    salt & pepper to taste
  • ·
    fresh turkey deli meat

How to Make Healthy Omelet

Step-by-Step

  1. chopped up my fillings and cooked them for about 3 minutes in a frying pan sprayed with Pam. We like a little crunch in our veggies. Remove to a bowl. In same pan, put eggs and cook on low, gently pulling in the sides till eggs are 95% cooked. Pour filling in and cover pan so eggs can cook the rest of the way. Fold over and slide onto plate. Very healthy and delicious.
