This is Hank enjoying the breakfast I made for him when he came over. Now that it has been three months since he moved out we have both transitioned into the next chapter of Mom and Son and it is great. One of the things I miss the most is cooking and sharing meals, so this was a great morning!

Ingredients For ham and cheese quiche

  • 2 1/2 c
    grated cheese, we used cheddar/monterey jack in this recipe, but cheddar and swiss work just as well
  • 1
    package pie crust
  • 6
    eggs
  • 3
    ham slices, cut into small pieces
  • 2 Tbsp
    best foods mayo, or hellman's
  • 2 Tbsp
    milk
  • pinch
    salt and pepper
  • OPTIONAL INGREDIENTS:THINGS I WOULD HAVE ADDED IF I HAD THEM
  • 1/4
    cup sliced green onions
  • 1/4
    cup red pepper, diced

How To Make ham and cheese quiche

    Thaw one pie crust circle. Put into pie plate and press in. Sprinkle the cheese evenly and then put the ham pieces evenly. Set aside.

    Crack six eggs into a bowl and beat for 30 seconds, add mayo and milk, once well mixed add salt and pepper. Pour over the ingredients in pie plate using a spoon to move the eggs and cheese around so the egg is all the way down to the crust.

    Bake at 375 degrees for 50-55 minutes. Cool for 10-15 minutes so it can set up before cutting into it.
