green eggs and ham
I was out eating breakfast on Feb. 28th 2012 for National Pancake Day at IHOP and had green eggs & ham along with my short stack of pancakes. The contributions for Children's Miracle Network Hospitals ended up raising over 3 million. Way To Go, IHOP!! My breakfast was yummy but I decided to do my own version of green eggs packed with flavor, festive looking and high on protein. See what you think. My nephew Rhyan who is 16 yrs old was over this weekend and had some green eggs and ham and loved them too. (His request:no shrooms please.)

Ingredients
- 1 small ham steak
- - maple syrup
- 4 large eggs
- 2 1/2 ounces baby spinach (1/2 bag)
- 1/2 cup mushrooms, fresh & sliced
- 1/4 cup onions, small white, diced
- 1 clove garlic, minced
- 1/2 small jalapeno pepper, sliced (no seeds)
- 2 tablespoons capers, optional
- 1/2 cup cottage cheese, large curd
- 1/4 teaspoon onion salt
- - fresh cracked black pepper
How To Make green eggs and ham

Step 1Saute your onions, garlic & jalapeno till tender then add your mushrooms. Once the shrooms are tender add your chopped creamed spinach and cook till hot. Cook up your ham while making your eggs and while cooking in pan add some maple syrup.

Step 2Cook up your ham in another pan and add some maple syrup.

Step 3Meanwhile, take your eggs and whisk them in a bowl, add cottage cheese to eggs & then add to your mixture in the pan. Add capers, onion salt, & pepper. Cook till eggs are done.

Step 4Plate up your green eggs and ham. Feast away.
