When my daughter Noel was a little girl... she always asked me to make this for her... one year she had a birthday party sleep over and I made this for 65 kids!!!

I now make this for my grandchildren while they are reading the book "Green Eggs and Ham"

We love to play with our food!

  • HAM

  • 1 1/2 tsp
    butter (for frying ham)
  • 6 12 slice

  • 6-8 large
    eggs (very well beaten)
  • 3 Tbsp
  • 2 dash(es)
    salt and white pepper
  • ·
    green food coloring to desired color
  • 1 Tbsp
    butter for cooking eggs

How to Make Green Eggs and Ham Breakfast !


  1. Melt butter in skillet and fry slices of ham.
  2. Beat eggs well. Add water salt and pepper and food coloring. Beat together well.
  3. Melt butter in skillet and add the beaten egg mixture.
  4. Scramble the eggs over medium heat. (Don't over cook and dry out the eggs).
  5. Place cooked eggs and ham on plates!

    This can be served with buns or English Muffins for sandwiches, with waffles or pancakes, or just like the photo shows! Anyway you serve this is good!
