I made this one morning for my sister when I had some mushrooms and spinich that needed using. Very good.

Ingredients
- 1 tablespoon olive oil or butter
- 5 - baby portabello mushrooms
- 1 bunch fresh spinich or any veggie you like
- 1/2 cup crumbled goat cheese
- 4 - eggs
- - salt & pepper to taste
How To Make goat cheese, mushroom omlett

Step 1Put oil or butter into skillet, heat and add sliced mushrooms (any kind), cook until tender and browned. Add spinich and cook for approx 2 minutes

Step 2Mix eggs in bowl add goat cheese. Place egg mixture into skillet and cook until eggs are beginning to set. Flip out onto plate and add some fruit on the side. Enjoy a healthy and tasty breakfast for two.
