Ingredients

  • 1 teaspoon olive oil, extra virgin
  • 6 cups fresh spinach leaves
  • 2 large eggs
  • 1 cup light cream
  • 1 cup reduced-fat, shredded monterey jack cheese
  • 1 cup reduced-fat, shredded swiss cheese
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 cup cherry tomatoes, sliced in 1/2
  • 1 - 9" deep dish pie crust

How To Make garden patch quiche

  • Step 1
    Heat oven to 350 Place pie crust in 9" pie pan. In lg skillet, heat oil over medium heat.
  • Step 2
    Add spinach to skillet, cook until just wilted. In lg bowl, Beat eggs and cream. Add both cheeses, onion powder, salt an pepper.
  • Step 3
    Stir in spinach and tomatoes. Pour mix into crust. Bake 40 mins, or until firm.
