Ingredients
- 8 slices smoked bacon, cooked crisp (or pepper bacon)
- 8 slices sourdough bread
- 1/2 cup gorgonzola cheese, crumbled
- 3 to 4 medium plum tomatoes, sliced
- 8 medium eggs
- 1 teaspoon chopped fresh thyme
- - salt and pepper to taste
How To Make fried egg sandwich with style
-
Step 1Cook and drain bacon; keep warm. Toast bread and keep warm.
-
Step 2For each sandwich, place a toast slice on a plate. Top with 1 oz. gorgonzola spread evenly on toast. Add 2 bacon slices and 2 or 3 tomato slices.
-
Step 3For each serving, fry 2 eggs until whites are set (completely coagulated and firm) and yolks begin to thicken (no longer runny, but not hard). Turn eggs over, if desired, for additional firmness of yolks. Remove eggs; place over tomato.
-
Step 4Sprinkle on salt and pepper, if desired, and dash of thyme. Close sandwich with another slice of toast. Serve immediately.
