I am trying to eat a little bit cleaner, every once in a well the naughty food. but this is a great egg salad you'll never miss the mayo...Yummo

yield make 2 cup (2 servings)

Ingredients

  • 3 - hard boiled eggs whites, chopped
  • 1 - hard boiled eggs yolk
  • 1 teaspoon mustard
  • 1/2 cup fat free cottege cheese, drained
  • 1 teaspoon fat- free skim milk
  • 1/4 cup celery , chopped
  • 1/4 cup green onions, chopped
  • - salt and pepper
  • 1/8 teaspoon celery seed

How To Make egg salad (eat-clean diet)

  • Step 1
    Boil eggs as desired.. Peel and chopped; then set aside.
  • Step 2
    In a blender add the cottege cheese , mil and mustard until smooth. Add the eggs, onion ,celery, salt pepper and celery seed. Mix well until combine. Chill for 1 hour. Serve on melba toast, 100% whole wheat bread..
