egg essentials: egg salad tower on rye
I served this to my houseguests on Easter Sunday morning. It was a different approach to a typical breakfast. This is a fun recipe to make, and it can either be assembled as a tower (for maximum presentation), or just as a humble sandwich… it is up to you. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 large eggs, medium/hard boiled
- 3 slices bacon, uncured variety, chopped
- 1 slice rye bread
- 2 tablespoons mayonnaise, plain variety
- 1 tablespoon sweet relish
- 2 teaspoons brown mustard, i prefer grey poupon
- 1 pinch sweet paprika
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste
- - fresh lettuce, i prefer rocket, frisee, or arugula

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Place the eggs into a pot of cool water.

Step 4Bring up to the boil, then remove from the heat, cover, and let stand in the hot water for 9 minutes.

Step 5Run the eggs under cold water, peel, and reserve.

Step 6Place the bacon into a skillet over medium-low heat.

Step 7Slowly cook the bacon until it begins to crisp, about 7 - 10 minutes.

Step 8Remove from the skillet, drain on paper towels, and reserve.

Step 9Cut the rye bread into small cubes.

Step 10Remove all but 1 tablespoon of bacon grease from the skillet, increase the temperature to medium, and add the bread cubes.

Step 11Toss in the hot skillet, until nicely browned, about 4 – 6 minutes, and reserve.

Step 12Add the egg, mayonnaise, relish, mustard, paprika, salt, and pepper, to a small bowl, and use a fork to mix the ingredients.

Step 13Do not break up the eggs too much; just enough to combine with the other ingredients.

Step 14Chef’s Note: Do a final testing for proper seasoning.

Step 15THE ASSEMBLY

Step 16Add enough cubed bread to cover the bottom of the ring.

Step 17Add a few leaves of lettuce.

Step 18Add about 2 – 3 tablespoons of the egg salad.

Step 19Cover with some chopped bacon, and press down.

Step 20PLATE/PRESENT

Step 21Add some lettuce to a plate, remove the ring, and sprinkle with some additional bread cubes, and bacon. Enjoy.
