This is a super quick and easy, healthy breakfast, you can even take with you when you're on the go! Prep your ingredients the night before and this literally takes about 2 minutes to make!

Ingredients
- 1 whole wheat flour tortilla
- 1-2 eggs, beaten
- 2 tablespoons diced, fresh tomato
- 1 green onion, sliced
- 1 slice part skim mozzarella cheese
- spring greens or baby spinach leaves
How To Make easy, healthy breakfast burrito

Step 1Spray a nonstick skillet with butter flavor cooking spray or heat 2 tsp. olive oil over medium high heat.

Step 2Add salt & pepper to eggs, beat until whites and yolks are well combined.

Step 3Scramble Eggs.

Step 4Place tortilla on plate in microwave and place slice of cheese on top. Microwave on high for 25 seconds.

Step 5Sprinkle with tomato, green onion, and eggs. Layer spring greens on top.

Step 6Fold over ends of tortilla and wrap tightly burrito fashion.
