diabetic cream cheese pancakes

My favorite is using a 6" skillet, and making them as you would a typical crepe. Spoon a little light yogurt of your choice down the center, add some fresh chopped fruit, and roll up like an omelet bar. Lightly drizzle with honey or sugar free syrup.
