Ingredients

1/2 c
chopped sweet onion
2 tsp
olive oil
1 c
egg beaters
1/2 c
diced fully cooked lean ham
1/4 tsp
bunyan's diabetic seasoning rub (recipe on jap)
1/8 tsp
freshly ground black pepper
1/8 tsp
sweet paprika
3 Tbsp
reduced-fat cream cheese, cubed

Step-By-Step

1In a nonstick lg skillet, saute onion in olive oil until tender.
2Reduce heat to medium; add egg substitute.
3As eggs set, lift edges, letting uncooked portion flow underneath.
4When the eggs are set, sprinkle ham and seasonings over one side.
5Top with cream cheese cubes.
6Fold omelet over filling.
7Cover, remove from heat and let stand for 1-2 minutes or until cream cheese is melted.
