This was my mothers recipe, but i made it lighter. It's still delicious!

Ingredients

  • 1/2 cup fat-free milk
  • 2 tablespoons flour
  • 3/4 cup egg beaters
  • 1 cup low-fat cottage cheese
  • 2 ounces reduced-fat cream cheese, cut up
  • 1 cup reduced-fat, shredded sharp cheddar cheese
  • 1/2 teaspoon sugar
  • 1/8 teaspoon pepper
  • - dried basil, for garnish

How To Make deliciously light quiche

  • Step 1
    Heat oven to 350. Spray a 9" pie pan w/ cooking spray.
  • Step 2
    In bowl, whisk milk and flour until smooth. Whisk in egg beaters, cottage cheese and cream cheese. It will be lumpy.
  • Step 3
    Stir in cheddar cheese, sugar and pepper. Pour mix into pan. Bake 45-50 min or until knife inserted in center comes out clean. Garnish w/ basil.
