This was my mothers recipe, but i made it lighter. It's still delicious!

Ingredients

1/2 c
fat-free milk
2 Tbsp
flour
3/4 c
egg beaters
1 c
low-fat cottage cheese
2 oz
reduced-fat cream cheese, cut up
1 c
reduced-fat, shredded sharp cheddar cheese
1/2 tsp
sugar
1/8 tsp
pepper
dried basil, for garnish

How to Make deliciously light quiche

Step-by-Step

  • 1Heat oven to 350. Spray a 9" pie pan w/ cooking spray.
  • 2In bowl, whisk milk and flour until smooth. Whisk in egg beaters, cottage cheese and cream cheese. It will be lumpy.
  • 3Stir in cheddar cheese, sugar and pepper. Pour mix into pan. Bake 45-50 min or until knife inserted in center comes out clean. Garnish w/ basil.
