Ingredients

  • 1/2 c
    fat-free milk
  • 2 Tbsp
    flour
  • 3/4 c
    egg beaters
  • 1 c
    low-fat cottage cheese
  • 2 oz
    reduced-fat cream cheese, cut up
  • 1 c
    reduced-fat, shredded sharp cheddar cheese
  • 1/2 tsp
    sugar
  • 1/8 tsp
    pepper
  • ·
    dried basil, for garnish

How to Make deliciously light quiche

Step-by-Step

  1. Heat oven to 350. Spray a 9" pie pan w/ cooking spray.
  2. In bowl, whisk milk and flour until smooth. Whisk in egg beaters, cottage cheese and cream cheese. It will be lumpy.
  3. Stir in cheddar cheese, sugar and pepper. Pour mix into pan. Bake 45-50 min or until knife inserted in center comes out clean. Garnish w/ basil.
