Ingredients
- 2 eggs
- 1 cup cooked corned beef, shredded, slightly warmed
- 1 English muffin, split and toasted
- CHEESE SAUCE
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup grated sharp cheddar cheese (Dubliner is a great choice)
- paprika, for garnish, optional
How To Make corned beef eggs benedict

Step 1Poach the eggs and set aside.

Step 2Make the cheese sauce: Melt the butter in a small pan over medium high heat and whisk in the flour. Whisk in the milk and bring to a simmer. Simmer for about 5 minutes or until it starts to thicken, whisking occasionally. Stir in the cheese until melted.

Step 3Place English muffin halves on plate and top with corned beef. Top each half with an egg and pour cheese sauce over. Sprinkle with a little paprika if desired. Serve.
