An “Irish” take on eggs Benedict. Uses a simple cheese sauce so no hollandaise sauce to make.

Ingredients

  • 2 eggs
  • 1 cup cooked corned beef, shredded, slightly warmed
  • 1 English muffin, split and toasted
  • CHEESE SAUCE
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup grated sharp cheddar cheese (Dubliner is a great choice)
  • paprika, for garnish, optional

How To Make corned beef eggs benedict

  • Step 1
    Poach the eggs and set aside.
  • Step 2
    Make the cheese sauce: Melt the butter in a small pan over medium high heat and whisk in the flour. Whisk in the milk and bring to a simmer. Simmer for about 5 minutes or until it starts to thicken, whisking occasionally. Stir in the cheese until melted.
  • Step 3
    Place English muffin halves on plate and top with corned beef. Top each half with an egg and pour cheese sauce over. Sprinkle with a little paprika if desired. Serve.
