Ingredients

  • 1/2 cup reduced-fat ritz crackers, crushed.
  • 1/4 cup " i can't believe it's not butter," melted
  • 4 large eggs, or egg beaters equivalent, beaten
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon pepper.
  • 1/8 teaspoon nutmeg.
  • 1 cup low-fat cottage cheese
  • 1 cup reduced-fat, shredded swiss cheese.
  • 1 cup finely chopped ham
  • 1/2 cup shredded carrots.
  • 1/4 cup sliced green onions.

How To Make classic ham & swiss quiche w/ a twist

  • Step 1
    Heat oven to 350. Spray a 9" pie pan w/ cooking spray, place on a baking sheet. In bowl, mix melted butter and cracker crumbs until moist and crumbly. Add crumbs to bottom and sides of pie pan, patting down. In bowl, whisk together Egg Beaters, flour, pepper and nutmeg until smooth. Stir in cottage cheese, swiss cheese, ham, carrots and onions. Pour into pie pan. Bake 40 min, or until knife inserted in center comes out clean.
