I am not big on breakfast BUT when i do eat breakfast...this is my favorite. Alot of resaurants feature it on there breakfast menu down in these parts but it is very easy to make at home and everything you need to make this can easily be found at any supermarket.

Ingredients For chilaquiles

  • 3-4 Tbsp
    lard or vegetable oil
  • 6
    stale corn tortillas, broken or cut into strips
  • 6
    eggs, beaten
  • 1/2 c
    chopped onion
  • 1/2 c
    canned green chilies, chopped
  • 1/2 tsp
    salt
  • 1 c
    shre longhorn or cheddar cheese

How To Make chilaquiles

  • 1
    heat lard or oul over high heat in a large frying pan.
  • 2
    When oil is hot, fry tortillas until crisp. Drain on paper towels.
  • 3
    Combine eggs, onion,chilies, and salt.
  • 4
    Stir in the tortilla chips or strips. Cook until almost set, add cheese, and continue cooking until cheese melts and eggs are firm.
