cheese and raisin latkes

A cheese latke instead of potato. We use these as a breakfast item or a snack. Cook time really depends on the size of your skillet. This makes 14 latkes.

Ingredients

  • 2 large eggs, separated
  • 1/4 cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 cups small-curd cottage cheese
  • 3/4 cup all-purpose flour
  • 1/2 cup raisins
  • vegetable oil

How To Make cheese and raisin latkes

  • Step 1
    Combine the egg yolks, water, sugar, and salt in a medium bowl; beat with a wire whisk until blended.
  • Step 2
    Stir in the cottage cheese. Add the flour and raisins; stir well.
  • Step 3
    Beat the egg whites at high speed of an electric mixer until stiff peaks form. Gently fold into the cheese mixture.
  • Step 4
    Pour oil to a depth of 1/8 inch into a large heavy skillet. For each latke, drop 1/4 cup mixture into the hot oil. Fry until golden, turning once. Drain, and serve warm.
