cheese and raisin latkes
A cheese latke instead of potato. We use these as a breakfast item or a snack. Cook time really depends on the size of your skillet. This makes 14 latkes.

Ingredients
- 2 large eggs, separated
- 1/4 cup water
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 cups small-curd cottage cheese
- 3/4 cup all-purpose flour
- 1/2 cup raisins
- vegetable oil
How To Make cheese and raisin latkes

Step 1Combine the egg yolks, water, sugar, and salt in a medium bowl; beat with a wire whisk until blended.

Step 2Stir in the cottage cheese. Add the flour and raisins; stir well.

Step 3Beat the egg whites at high speed of an electric mixer until stiff peaks form. Gently fold into the cheese mixture.

Step 4Pour oil to a depth of 1/8 inch into a large heavy skillet. For each latke, drop 1/4 cup mixture into the hot oil. Fry until golden, turning once. Drain, and serve warm.
