My husband grew up in California and loves avocados. He eats them like apples. This is his kind of breakfast. The egg can be poached, or scrambled and does not have to be a fried egg.

  • 1
    ripe avocado, peeled, pitted and cubed
  • 1/2 tsp
    lemon juice
  • 1/4 tsp
    salt
  • 1/4 tsp
    crushed red pepper
  • 4
    slices whole grain bread
  • 4
    eggs

How to Make California Sunrise Toast

Step-by-Step

  1. Mash avocado, lemon juice, salt and crushed red pepper in bowl.
  2. Spread on 4 slices of whole grain bread. Top with 1 fried egg.
