breakfast to go !!!

My daughter Noel makes Breakfast To Go !!! when ever we are in a hurry but know we should eat... This is healthier than the fast food joints (tastes better too!) We timed it... it is faster than going to a fast food joint too!! Try this... you will make it your "to go to" recipe... lol

Ingredients

  • EGG MIXTURE
  • 1/4 cup water
  • 6 large eggs (well beaten with the water)
  • - salt and pepper (to taste)
  • VEGGIES
  • 1/2 large bell pepper (diced)
  • 1/2 large onion (diced)
  • OIL FOR COOKING
  • 1 tablespoon butter, margarine or olive oil
  • CHEESE
  • - favorite cheese(s) (to taste)

How To Make breakfast to go !!!

  • Peppers
    Step 1
    Wash clean and chop up the onion and bell pepper.
  • Butter melting in a skillet.
    Step 2
    Melt butter in skillet over medium heat.
  • Onions and peppers
    Step 3
    Add onion and bell pepper to skillet and saute' until onion is translucent.
  • Beaten eggs with salt, pepper and water.
    Step 4
    Beat together well the eggs, water, salt and pepper.
  • Step 5
    Pour the egg mixture into skillet over the veggies. Do not stir or scamble. But section by section flip egg and veggies over. Add cheese on top of eggs and veggies. Place lid on skillet. Turn heat off.
  • Eggs with onion, green peppers, and cheese on an English muffin.
    Step 6
    Open English muffin, place some cheese and egg mixture on top of half of the muffin. Place the other half of muffin on top and serve!
