Why save this great meal only for breakfast- when you can have it for lunch or dinner too! You can make your own flavored chips too, but not necessary. This recipe is for single serving, but can easily be made for many.

Ingredients For breakfast for dinner too

  • 2 lg
    eggs, beaten
  • 1 md
    or large link of chorizo sausage, or your favorite sausage
  • 1 c
    colby jack cheese- shredded
  • GARNISHES:
  • any or all of the following:diced avocado, tomato, green onion,sliced black olives and sour cream
  • FLAVORED TORTILLA CHIPS:
  • 8 to 12
    tortilla chips
  • canola oil spray
  • taco seasoning mix

How To Make breakfast for dinner too

    Easy flavorful tortilla Chips: Preheat oven to 350^. 8-12 low sodium or no-salt tortilla chips Lay chips on cookie sheet and spray with canola oil. Sprinkle with taco seasoning. Bake 3 minutes. Remove from oven and place in pie tin.

    Cook chorizo according to package directions. After it is cooked, cool-then cut into slices.Set aside. --- In a small skillet scramble the eggs to just under the doneness you like- they will continue cooking under broiler. Preheat oven to 400^ to broil.

    Assembly: Place prepared tortilla chips in a pie tin and sprinkle with a little of the cheese. Spoon the chorizo slices in a circle around the scrambled eggs.

    Sprinkle the remaining cheese over the ingredients in the pan. Broil in oven for 1 minute. Remove and place onto a serving plate. Garnish with any or all of the remaining ingredients. This is great as a snack too!

    Note: For making other great tortilla chips: Preheat oven to 350^: Layer tortilla chips on cookie sheet- spray with canola oil. Sprinkle with herbs and/or spices of your choice.Bake 3 minutes!

    For your tuna salad- try lemon dill chips For egg dishes- try taco spiced cheddar chips For your guacamole dip- try lime and sea salt You choose- dry seasonings, sauces and salad dressing mixes you like.
