There are so many names for this one, but if you like toast and fried eggs you probably have a version of it. It makes a quick and easy breakfast that satisfies as the yolk soaks into crusty bread. My favorite here has sweet bites as well as savory ones. (Note: using both the oven and the skillet keeps from burning the cinnamon/sugar mixture).

Ingredients
- 2 slices favorite bread for toast
- 2 tablespoons unsalted butter, softened
- 1 tablespoon sugar
- 1/2 teaspoon ground cinnamon
- 2 - eggs
- 1 pinch kosher salt
- 1 pinch fresh ground pepper
How To Make bird in the nest

Step 1Take bread slices and cut out hole in the center with a biscuit cutter.

Step 2Mix the sugar and cinnamon together. Spread half of the butter on the bread and then sprinkle the cinnamon mixture on top. Broil in oven until lightly browned.

Step 3Place remainder of butter in a hot non-stick skillet and place toast slices (browned side up)in immediately. Crack an egg into each of the center holes. Season with salt and pepper.

Step 4Cover the skillet so the yolk will cook without having to turn the bread over. Cook on medium high until the egg is over easy or over medium.

Step 5Place the toast on a plate and drizzle with pure maple syrup or honey.
