There are so many names for this one, but if you like toast and fried eggs you probably have a version of it. It makes a quick and easy breakfast that satisfies as the yolk soaks into crusty bread. My favorite here has sweet bites as well as savory ones. (Note: using both the oven and the skillet keeps from burning the cinnamon/sugar mixture).

Ingredients

  • 2 slices favorite bread for toast
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cinnamon
  • 2 - eggs
  • 1 pinch kosher salt
  • 1 pinch fresh ground pepper

How To Make bird in the nest

  • Step 1
    Take bread slices and cut out hole in the center with a biscuit cutter.
  • Step 2
    Mix the sugar and cinnamon together. Spread half of the butter on the bread and then sprinkle the cinnamon mixture on top. Broil in oven until lightly browned.
  • Step 3
    Place remainder of butter in a hot non-stick skillet and place toast slices (browned side up)in immediately. Crack an egg into each of the center holes. Season with salt and pepper.
  • Step 4
    Cover the skillet so the yolk will cook without having to turn the bread over. Cook on medium high until the egg is over easy or over medium.
  • Step 5
    Place the toast on a plate and drizzle with pure maple syrup or honey.
