this is obviously a vegan replacement for scrambled eggs. I leave the food color out and use a little extra turmeric.

This is used in the Baked Yellow Zucchini, Leek and Vegan Feta "Omelette"
with Fresh Dill and Mint recipe

  • 1/3 c
    raw walnut pieces
  • 1/3 c
    raw cashew pieces
  • 3 Tbsp
    raw sunflower seeds
  • 1/4 c
    roasted sesame seeds
  • 1/4 c
    nutritional yeast
  • 2-3 tsp
    kosher salt
  • dash(es)
    garlic powder
  • dash(es)
    turmeric, ground
  • dash(es)
    yellow mustard powder

  • 1 pkg
    12oz soft silken tofu
  • 1 pkg
    12oz extra firm silken tofu
  • 1/4 c
  • 3/4 c
    "egg" mix (above)
  • 1 Tbsp
    mellow white miso paste dissolved in 1 tbsp hot water
  • dash(es)
    of garlic powder
  • dash(es)
    of turmeric
  • dash(es)
    of yellow mustard powder
  • 2 dash(es)
    of curry powder
  • 1 1/2 dash(es)
    black himalayan salt, to taste
  • about 1 Tbsp
    nature’s flavor orange food coloring (optional, for color)

How to Make Basic Scrambled “Eggs” Mix


  1. Blend all the ingredients To make the "Egg" Mix together in a food processor until the just start to stick together. It should smell/taste "eggy" to you when you're finished. Omit the last 3 ingredients to make a bitchin' Parmesan substitute. Also great when sprinkled on tofu when making a scramble.
  2. Blend all of the above ingredients to make Basic Scrambled “Eggs” Mix in a food processor . Taste for salt.
