Ingredients
- 2 large ripe tomatoes
- 1 - onion, finely chopped
- 1 tablespoon olive oil
- - chopped garlic, to taste
- 8 - eggs
- - salt and pepper, to taste
- 1 tablespoon parsley or mint, chopped
How To Make balbuljata (maltese scrambled eggs)

Step 1Peel, seed and chop the tomatoes.

Step 2Cook onion in oil and a little butter until soft.

Step 3Add the garlic and tomatoes and cook for 5 minutes more.

Step 4Beat the eggs lightly with the salt and pepper and pour over the tomatoes and onions.

Step 5Add more butter if needed. Add parsley or mint and stir continuously over low heat until the eggs are barely set.

Step 6Serve hot.
