Ingredients

  • 2 large ripe tomatoes
  • 1 - onion, finely chopped
  • 1 tablespoon olive oil
  • - chopped garlic, to taste
  • 8 - eggs
  • - salt and pepper, to taste
  • 1 tablespoon parsley or mint, chopped

How To Make balbuljata (maltese scrambled eggs)

  • Step 1
    Peel, seed and chop the tomatoes.
  • Step 2
    Cook onion in oil and a little butter until soft.
  • Step 3
    Add the garlic and tomatoes and cook for 5 minutes more.
  • Step 4
    Beat the eggs lightly with the salt and pepper and pour over the tomatoes and onions.
  • Step 5
    Add more butter if needed. Add parsley or mint and stir continuously over low heat until the eggs are barely set.
  • Step 6
    Serve hot.
