I got this recipes from a friend of mine when i was visiting her house.. Loved it!! I changed it a little to fit my taste..

Ingredients

  • 1 cup reserved cooked tomato sauce ( my recipe)
  • 4 large eggs
  • 1/8 teaspoon ea of salt and coarse black pepper
  • 2 tablespoons chopped fresh chives
  • 1/8 teaspoon paprika, sweet mild

How To Make baked red eggs

  • Step 1
    Preheat oven to 350 f. Spray 4 ramekins with non-stick spray.
  • Step 2
    Heat up the tomato sauce, then divide the tomato sauce evenly among the prepared cups. Set aside and cool to room temp, about 15 minutes.
  • Step 3
    Carefully break 1 egg in each cup: sprinkle salt, pepper, paprika over eggs..
  • Step 4
    Place the ramekins on a baking sheet, and cook until set for about 25-30 minutes. Sprinkle with chives.. Optional add Mexican creme and cheese..
