Ingredients

  • 6 slice
    prosciutto thinly sliced
  • 2 oz
    fresh mozzarella cheese torn into small pieces
  • 3 large
    basil leaves ,torn
  • 6
    eggs
  • ·
    freshly ground pepper

How to Make Baked Prosciutto and Egg Cups (low Carb)

Step-by-Step

  1. Coat 6 cups of muffin tin with cooking spray and fit each with a prosciutto slice
  2. Divide half the cheese and basil among cups
  3. Crack an egg into each and nestle remaining and basil around eggs
  4. Bake at 375 until set, about 15 minutes then let rest for 5 minutes
  5. Season with pepper. Run knife around cups to unmold
