One of my boyfriend master pieces, I love when he make this breakfast for me. One his cooking for me, that's nice.. Second its his mothers recipe, even better..:)

Ingredients

8 large
eggs
6
corn tortillas
2 Tbsp
canola oil
salt and pepper
1 tsp
garlic powder with parsley
1/4 c
monterey jack cheese (jalapeno style if desire)
1/4 c
homemade salsa

HOMEMADE SALSA

2-3 large
tomatoes
1 c
green bell pepper, chopped
1 medium
shallot, minced
1 clove
garlic, minced
1/2 tsp
ground cumin

Step-By-Step

1Homemade salsa-

Combine the tomatoes, bell peppers, shallots,garlic, cumin , salt and pepper in a serving bowl. Cover and chili to let flavors blended.
2Add the oil to a large skillet, tear up the corn tortilla into bite size pieces; cook until slightly toasted. Place each egg, over tortilla. Add the garlic powder, salt and pepper. Mix together until eggs are cooked to desire texture. Sprinkle cheese over eggs and topped with salsa.
