Ingredients
- 8 large eggs
- 6 - corn tortillas
- 2 tablespoons canola oil
- - salt and pepper
- 1 teaspoon garlic powder with parsley
- 1/4 cup monterey jack cheese (jalapeno style if desire)
- 1/4 cup homemade salsa
- HOMEMADE SALSA
- 2-3 large tomatoes
- 1 cup green bell pepper, chopped
- 1 medium shallot, minced
- 1 clove garlic, minced
- 1/2 teaspoon ground cumin
How To Make antonio's miagas con huevos

Step 1Homemade salsa- Combine the tomatoes, bell peppers, shallots,garlic, cumin , salt and pepper in a serving bowl. Cover and chili to let flavors blended.

Step 2Add the oil to a large skillet, tear up the corn tortilla into bite size pieces; cook until slightly toasted. Place each egg, over tortilla. Add the garlic powder, salt and pepper. Mix together until eggs are cooked to desire texture. Sprinkle cheese over eggs and topped with salsa.
